We signed up for the sunrise boat tour, which left our hostel by tuk tuk at 5AM.  The boats here are pretty awesome.  Long, slender, and run by huge motors.  Bart even saw one with a car engine and stick shift on board.  We stopped at a silver smith shop, monk monastery, temple, lotus weaving shop, cigar making shop, and even saw a couple long neck women.  It was an all day event and we enjoyed it very much.  A couple from Brazil were on the tour with us and they were very friendly.  We had some yummy pizza at Pub Asiatico and then relaxed for a bit before going on a bike ride in search of water buffalo.  We haven't had a chance to see them up close yet, only from the road or boat.  After a hot ride in the sun and a short walk along the river, we found them.  Such unique animals.  We ate at a local restaurant and were super happy with the cheap price.
